Aidan Ross MIH - Owner and Managing Director

Aidan has operated in the hospitality industry for over 30 years in many sectors including banking, corporate head office environments, independent and state education, restaurants, conferencing, and banqueting. Aidan’s career started as a chef and has progressed into senior management where most recently he was Regional Director operating a large portfolio of sites across London and the South East of England.

He has a true understanding on how to operate a well-managed kitchen and efficient quality service and always seeks opportunities to enhance on the foundations already in place.

He has significant experience in kitchen design, both in new build and refurbishments and has built up a strong network of suppliers he can recommend where there is a need. He will input constructive feedback into this process, drawing from his experience of operating in kitchens.

He is hugely experienced in mobilisations of new contracts and ensuring KPI delivery. Aidan also has significant experience in food safety and health and safety and can support in improving standards in these areas. Born out of a desire to be in an entirely supportive role with a more hands on approach where he could work more closely with the clients and kitchen teams, he founded Cantium Catering Consultancy.

Cantium Catering Consultancy supports clients in some of the day to day challenges faced where specialist catering experience is needed. This could be for example; subsidy reduction, contractor management, kitchen improvement or simply food standards.

Operating in both independent and state schools in either in-sourced or out–sourced arrangements, the business has flourished, allowing him to work in a variety of settings offering a diverse range of support.

The consultancy has given Aidan great satisfaction in the knowledge that he can directly support the client and team alike to build a solid and transparent working relationship that achieves the school's vision through guiding in a positive manner. He sees it as a privilege to work closely with the clients and teams and to become part of the school community to help improve catering services and food quality and nutrition, ultimately benefiting the pupil's health and their ability to learn.

We offer a number of bespoke, entirely flexible services including one-off auditing, retained support, contractor management support and tendering services. We are also capable of supporting both in-house and outsourced schools.

How can we help support you and your catering team?

Depending on how your catering is operating, the skill of your team, the support from your contractor and if this is in-sourced or out-sourced, there are a number of different packages that we could discuss with you.. The initial consultation to discuss / agree a scope of works is free of charge and a fixed rate is agreed for a given support package or number of days. We are entirely flexible in our approach and detail some of the options available:

Compliance, Governance and Monitoring

  • A one-off high level review to benchmark performance with suggested corrective actions
  • A one-off detailed audit with corrective actions being implemented over a defined number of days
  • An annual agreement to attend site on a number of specified days per year to monitor performance of your out-sourced catering contract; providing a review on contractor performance on finance, compliance and any agreed KPIs / SLAs
  • An annual agreement to attend site on a number of specified days per year to monitor performance of your in-sourced catering team; providing recommendations on compliance, training, service and added value
